Pancakes (yum)

Pancake day is here and I thought I'd share my favourite recipe! Over the years I've ended up combining a few recipes together, to make the tastiest pancakes (in my opinion anyway). This recipe will make 6-8 pancakes, depending how big you want them.
You will need:
190g Self Raising Flour
1 Teaspoon Baking Powder
1 Egg
1 Teaspoon Vanilla Extract
300ml Milk
Method:
1. Whisk the egg, milk and vanilla extract together.
2. Mix the flour and baking powder together in a seperate bowl, then add the egg mixture and beat together. At this point add any extra ingredients, I like blueberries in mine but chocolate chips or raisins would work too!
3. Melt a knob of butter in a non-stick pan over a medium heat, use a ladle to drop some batter into the pan at your desired pancake size. Cook until bubbles appear on the surface of the pancake (roughly 2-3 minutes), and then flip and cook for the same amount of time again until golden.
4. Enjoy pancakes! I love greek yoghurt and honey on mine personally!
